The most-used pan in your kitchen

A fry pan (skillet) has a flat base and sloped sides that let moisture escape and make flipping easy. It's the pan most people reach for daily: eggs in the morning, a sear at dinner, vegetables in between. Choosing the right size and surface makes a bigger difference than almost any other cookware decision.

Sizes are measured across the rim, so a 12" pan has a flat cooking surface around 10". For most households, a 12" clad stainless pan is the best first fry pan. It fits food for 3–5 people without crowding, sears well and goes in the oven. Add a 10" nonstick for eggs.

Quick buying checklist

  • Fully clad construction for even heat to the edges.
  • A lid for steaming and splatter control.
  • A helper handle on 12" and larger.
  • Induction compatibility if needed.
  • An oven rating that fits your recipes (D3/D5 listings: 600°F).

Stainless, nonstick or copper core?

For searing, pan sauces and oven finishing, choose fully clad stainless; the 12" tri-ply fry pan with a lid is the classic workhorse. For eggs and fish, add a nonstick fry pan. For the fastest response on gas or induction, Copper Core's 12" fry pan with a helper handle is the premium option. Many cooks also like an 8" and 10" pair for smaller jobs.

Fry pan care

Preheat stainless before adding oil, deglaze while hot, and dry promptly. Keep nonstick at moderate heat with soft utensils.
